www.axialvinos.com History of brand: Pagos del Moncayo is an artisanal & sustainable winery located at the foothills of the Sierra del Moncayo, in the heart of the Iberian mountain range as it passes through Aragon. We make our wines in an artisanal way from hand-picked grapes, treading the grapes ourselves to produce Prados hand-crafted wines. This commitment with craftsmanship brought us the recognition of being the European referent in sustainable wine elaboration by the EU project ECO-PROWINE. Vineyard: Despite being a foreign variety, the Syrah grape has adapted perfectly to our lands and is a perfect complement to the autochthonous Grenache grape. In this case, we have selected the best Syrah grapes from our Pago La Loma to present 85% Syrah wine. Fermentation & Ageing: The vineyard are harvested during the fresh mornings in September, and produced 170 crates of handpicked grapes that gave birth to a smashing wine. After resting for 12 months in new oak barrels we bottled 2.900 bottles. Small grapes are especially selected from the low-yield bush vines to guarantee the perfect maturity grade. The fruit is taken to the winery, destemmed and taken to stainless steel tanks for maceration. The alcoholic fermentation takes place for 7 to 10 days until the extraction of yolk wine. After the malolactic fermentation in new American oak the wine rests in barrels for 12 months and another 10 months in the bottle. Winemaker's notes: Deep purple colour with aromas of fresh thyme and rosemary permeated from the neighboring meadows (AKA Prados). On the palate this is a big, impressive wine, pure ripe fruit: silky, tasty and dense. It is spiced up with soft tones of oak, balanced with ideal acidity. Superb, long and generous finish. Service suggestions: We suggest serving at a temperature of 16-18ºC, as an accompaniment to braised lamb, smoky spiced T-Bone steaks or lobster paella.
